Week #49’s topic is “Family Recipe”. There is one recipe I think of and that is my Grandma’s Busy Day Cake. I can’t make it like her – she was a far more skilled baker than I. I’m a pie person – I’ll take that over cake any day. But this cake – well the thought of it just makes me happy!

This is the Betty Crocker recipe for “Busy Day” Cake. Grandma would make the white cake. Her broiled icing was chocolate, and she would add coconut to it. I am not a big coconut person, but it works with this frosting. I don’t know if it’s so much the cake, or the memories it evokes in me. It brings back memories of my grandparents, of our house and garden, of smelling the cake baking. It just makes me think of home.
